Caramelized Onion Galette Recipe

A galette is a term used to describe a free form pastry, usually made of a single layer of dough, that is filled with a savory or sweet mixture. The mixture is then folded over the edges to form a crust. This Caramelized Onion Galette is a great example of this classic French dish. The caramelized onions and gruyere cheese are the perfect combination for this simple yet delicious galette. It is an easy dish to make and can be enjoyed as an appetizer or an entree. It is a great way to impress your guests at your next dinner party.

To make this galette, start by making the dough. Combine the all-purpose flour, salt, and butter in a food processor and pulse until the butter is in small pieces, about the size of peas. Add the cold water and process for about 30 seconds until the dough begins to come together. Remove the dough from the processor and form it into a disk. Place the disk in the refrigerator and let it rest for at least 1 hour.

While the dough is resting, make the caramelized onions. Heat the olive oil in a large skillet over medium heat. Add the onions and stir to coat. Cook the onions, stirring occasionally, until they are a deep golden brown color, about 20 minutes. Add the garlic and cook for another 3-4 minutes. Remove from the heat and let cool.

Assemble the Galette

Preheat the oven to 375 degrees F. Remove the dough from the refrigerator and roll it out on a lightly floured surface into a 12-inch circle. Place the rolled out dough onto a parchment-lined baking sheet. Spread the caramelized onions evenly onto the dough, leaving a 2-inch border around the edges. Sprinkle the Gruyere cheese over the top of the onions. Gently fold the edges of the dough over the onions and cheese, pleating the dough as you go.

Bake the Galette

Bake the galette in the preheated oven for 25-30 minutes, until the crust is golden brown. Let the galette cool for 10 minutes before serving. Enjoy!

Tips for Making Caramelized Onion Galette

When making the dough, make sure the butter is cold and cut into small pieces. This will ensure that the dough will be flaky. The onions need to be cooked for a long time to achieve the desired caramelization. The longer you cook them, the deeper the flavor. Make sure to use a good quality Gruyere cheese for the best flavor. Feel free to add other ingredients to the galette such as bacon, mushrooms, or even dried fruit. Have fun and experiment!
